Even though you are not a chef, and you do not know much about professional cutlery, it will be advisable for you to be informed about different types of kitchen knives.
A basic set of knives might include two or more of the following: A 15-17cm cook's knife is essential and the first knife to invest in. In the beginning, it will appear as big, but with practice it will become your knife of choice. It is a good all-round knife with a long, wide, general-purpose blade; it can be used for slicing, dicing, crushing, chopping and mincing.
A paring knife is the most commonly used blade in a domestic kitchen. It is a mini version of the chef's knife used for slicing and dicing vegetables and delicate pastry cutting. Models with a hooked curve are handy for cutting zest from citrus fruit.
A serrated tomato knife is one item that is cheap and also disposable. It cuts through tough, shiny tomato skins without squashing the flesh and is also good for segmenting oranges.
If you want to cut fish and such other things, a filleting knife is the best option for you. It is thin, flexible and pointed. The blade follows the bones closely, without leaving any waste along with it by making you less loss for the food items. It will be advisable for you to use a heavier knife to remove fish heads.
If your purpose is to remove bones from meat, a boning knife with a narrow blade and a sharp point is used solely for removing bones. It is mainly of two kinds. Some of them have a flexible blade for poultry, while some others have a rigid blade for dealing with bigger joints.
To slice meat, a carving knife is the best for you. It is long and flexible enough to allow meat to be sliced thinly. Some of them possess a point, used to free meat from a joint with a bone like in a boning knife; but the round tip carving knives are used for boneless joints and known as slicers.
To cut through a hard crust of bread without squashing the slices, you should have a serrated bread knife with you. A serrated bread knife is long and rigid. It can't sharpen in the usual way, so only use on a wooden or polypropylene surface. It is not advisable to use them for chopping because it will become dull easily and also cant be sharpened easily.
A pallet knife is long and flexible with a rounded tip for easing cakes out of tins, sliding under pastry or spreading cream or icing

If you are a professional chef, you are recommended to buy all these, if not, you can specify your knives according to your use i.e. a vegetarian guy do not need a carving knife.
